The history of this precious legume is very ancient. From time immemorial it has been cultivated on karstic planes of Castelluccio, inside the territory of Sibillini Mountains, at an altitude of 1500 metrers. Sowing takes place in springtime, when the snow has melted away. In June, fields sown with lentils bloom in every colours: the famous flowering of Castelluccio. Harvest is effected in July: lentils are piled up and let desiccated. Treshing is effected in August. In September lentils are packed and distributed by the Cooperative. The lentils amount a year is limited. That's why lentil is a niche product. Thanks to the harsh weather conditions in which is born, the lentil of Castelluccio is the only legume that doesn't need to be cured for preservation, because it is not infected by the "Tonchio", a coleopter whose larvas feed on legumes. The lentil of Castelluccio has remarkable nutritional qualities: all its proteins, vitamins, fibre and mineral salts make it very good for those who need a diet rich in iron, potassium and phosphorus, low in fats and very nutritive. Another important characteristic of the lenitl of Castelluccio is the thin and tender peel, which allows the cooking without soaking, reducing the preparation times.
