Sapa is made with only single ingredient: grapes absolutely no additives (no colorants, no preservatives, no thickeners). Sapa is made from must, bolled slowly in dedicated pots until the evaporation lowers the volume to one third of the initial. The high concentration of sugar prevents fermentation, so contains no alcohol and, once packaged, is used as a condiment or sauce. It's good with cheese, but also with fruit, over ice cream, with corn meal, with meat and many other ways. It has antioxidant properties and make a radical scavenging activity.
Sapa has ancient origins that date back to Roman age. A Latin author, Apiciius, called the "sapuum" as a cooked grape must, concentrated, sweet, that was given included the legionnaires.
